22.鸡茸玉米羹

22. Chicken and Corn Soup 1 can of canned corn, half
a fresh chicken, 4 shiitake mushrooms, 2 eggs, 2 bowls of chicken stock,
appropriate amount of water chestnut flour.
- Clean
the chicken meat, cut into small cubes, and mix with seasoning. Dice the
shiitake mushrooms.
- Open
the canned corn and pour it into the chicken stock, stirring and bringing
to a boil.
- Add
the chicken and mushrooms, continue boiling for a few more minutes. Adjust
seasoning.
- Mix
water chestnut flour with water to form a thin paste and then stir it into
the soup.

23. Stir-fried Mushrooms with Pork Slices 640g of enoki mushrooms, peeled and sliced, then soaked in clean water for a while and drained. 200g of lean pork (with some fat), sliced. Fermented soy sauce, green garlic.
- Heat
up the pan and sauté the pork slices with fermented soy sauce and green
garlic.
- Add
the enoki mushroom slices and stir-fry.
- Add

24. Braised Big Fish Head Two freshwater big fish
heads, cut along the sides, seasoned with salt, sugar, and light soy sauce,
then marinated briefly. Coat the fish heads with dry flour and fry them in hot
oil until golden brown, then remove. 60g of shredded meat, 4 shiitake mushrooms,
shredded. Some ginger slices and green garlic.
- Heat
the pan, sauté the shredded meat, add a little cooking wine, water, and
seasoning.
- Add the mushroom slices and fish heads, braise together.
- Serve the dish on a plate, sprinkle with some ground pepper and fresh cilantro.
