34.鱼尾鲜茄汤
脘鱼尾2条,洗净。撒些盐花稍腌,煎香,即席倾下两汤碗清水,六片姜,改用瓦煲滚着,另方面,准备好400克蕃茄,切开边,在锅内爆过,加在鱼尾内同煲煮片刻,用些盐,糖调味,汤水微酸而鲜美,捞起鱼尾,豉油熟油蘸吃。
老少平安是无骨净肉,而且嫩滑可口。板豆腐2块,鲮鱼脊肉2条切薄,剁烂成茸,拌鞑成胶,虾米20克捯碎,腊肉半条切碎与香菜,葱花,胡椒粉等加味拌匀蒸之,熟后虾些老抽,熟油。
36.西兰花炒猪腰
西兰花1个约400克,切开小朵朵,用盐水净泡过,放入沸水内焯熟待炒。猪腰2个,开边,去掉内里之白筋,片成片块,加味腌过后,用些姜片,烧酒烩炒。

34. Fish Tail and Fresh Tomato Soup
Take two fish tails (preferably wanyu, a type of croaker), clean them
thoroughly. Sprinkle with a bit of salt and marinate briefly, then pan-fry
until fragrant. Immediately add two bowls of water and six slices of ginger
into the pan, then transfer everything into a clay pot to bring to a boil.
Meanwhile, prepare 400g of tomatoes, cut them into wedges, briefly stir-fry
them in another pan, and add them into the clay pot with the fish tails. Simmer
briefly. Season with some salt and sugar. The soup will have a slightly sour
yet deliciously fresh taste. Serve the fish tails with soy sauce and hot oil
for dipping.
35. Harmony for All Ages
This dish uses boneless and tender ingredients, suitable for both the elderly
and children.
Take 2 blocks of firm tofu and the fillets of 2 dace fish, slice thinly and
mince into a fine paste. Mix the fish paste until it becomes sticky and
glue-like. Add 20g of dried shrimp (finely chopped), half a piece of Chinese
sausage (chopped), coriander, chopped green onions, and white pepper. Mix well
and steam the mixture. After it's cooked, drizzle with a bit of dark soy sauce
and hot oil.
